Caraway not only makes a striking visual addition to any garden setting, it also has culinary value with a flavour not unlike Anise. The leaves are a lovely addition to salads, while the seeds can be used in baking. The seeds are also popular for cooking Indian dishes. When the plant dies back the roots can be dug up, brushed off and peeled to cook and eat like parsnips. Caraway acts as a digestive aid and, interestingly, has a history of being a key ingredient of magical love potions! Also known as Ammi or Persian Cumin, Caraway is a bushy biennial that will flower and produce seeds in its second year. This bushy herb is highly aromatic, and its nectar-rich blossoms attract bees and other beneficial insects to the garden - which is good news for other crops you wish to pollinate.
